I think it would be helpful to implement the option of creating a new organization for situations where we are working on two different projects with different teams.

This is on our to do list.
Meanwhile, there is a work-around solution: Use an email account that has not been used for a CyberTracker project to create a new organization. Then invite yourself as an Admin member. You can delete the other email account if you need to use it to create a third organization.
